Nashi and Gruyere Julienne Salad

Ingredients

  • Olive oil
  • Small loaf of walnut or wholemeal bread in 1 cm cubes
  • 3 Nashi
  • 3 lemons
  • 200g Gruyere cheese
  • 1 Tbsp Dijon mustard
  • 2 shallots finely chopped
  • Sea salt and freshly ground pepper
  • ½ cup walnut oil
  • ½ cup walnuts roughly chopped (optional)
  • Mescalin or fancy lettuce leaves.
